Jacket potatoes are easy, they’re delicious and they’re so versatile!
Instructions:
Set the oven to 200°C. Scrub and dry 4 large baking potatoes (about 250g-300g each). Prick them in several places with a fork. Bake directly on the oven shelf for 1 1⁄2 – 2 hours or 30 minutes for new potatoes, until they feel soft when you squeeze them. The toppings can be provided as a selection along with options such as butter, grated cheese and sour cream.
Toppings
1 Blanch 2 large tomatoes then remove skins and seeds. Dice the flesh into small cubes. mix with 2 tablespoons of finely chopped spring onions and 2 tablespoons of finely chopped fresh herbs: can be basil, coriander or parsley. Add a little salt and black pepper.
2. Finely mince 2 cloves of garlic and mix with 2 diced avocados. Sprinkle with lemon or lime juice.
3. Caramelised Onion Cook 1 large thinly sliced onion in a skillet with 1 tablespoon olive oil and a little salt until caramelised and nicely brown.
4. Mushroom. Saute 2 cups sliced mushrooms and 2 cloves of crushed garlic in olive oil until soft.
5. Baked beans or curried beans and even dahl are also nice as toppings.
